Veg Kurma
Veg Kurma is a south Indian curry, goes well with almost all south Indian breakfast dishes. This is made with mixed vegetables, Coconut and some spices. Coconut is the base of the gravy.
Ingredients:
Vegetables ( Green beans, Cauliflower, Carrot, Potato, Green Peas ) - 11/2 Cup
Oil - 3 to 4 Tsp
Onion - 1/2 Medium size
Tomato - 1/2 Medium size
Curry leaves - 2 to 3
Turmeric - 1/2 Tsp
Chilly Powder - 1/2 Tsp
Coriander leaves finely chopped
Almond and Cashew - 10 to 12
Salt to taste
For Masala:
Desiccated coconut - 2 Tbsp
Green chilly - 1
Roasted channa - 2 Tsp
Coriander seeds - 1/2 Tsp
Poppy seeds - 1 Tsp
Peppercorns - 10 to 12
Cardamoms - 1
Cloves - 1
Ginger and garlic - 1/2 Tsp
Method:
1. Soak almond and cashew for half an hour.
2. Cut the vegetables to the medium size.
3. Add the ingredients mentioned in 'For Masala ' to mixing jar including soaked almond and cashew.
4. Adding some water grind it to the smooth paste.
5. Pressure cook the vegetables for 2 whistles.
6. In a kadai add oil and cumin seeds.
7. When cumin seeds starts sputtering add onion and curry leaves.
8. Fry onion till it becomes translucent. Add tomato.
9. Fry it for a minute and add turmeric and chilly powder.
10. Add masala paste.
11. If required add 1/2 cup of water.
12. Add cooked vegetables.
13. Add salt to taste and cook it for 5 min.
14. Add coriander leaves.
15. Serve Veg Kurma with Dosa, Poori or any south Indian dishes.
