Aloo bun / Potato bun

Aloo buns are one of my favorite bakery item.  I used to have these buns when i was in Bangalore. But i am missing these buns. So i decided to try this at home. This is my first attempt and yes i did it successfully. Buns came out very  soft and tasty.

Aloo buns are nothing but soft buns stuffed with spiced potato and onion. This is a very good evening snack. You can have this without any sauce or chutney. But hot cup of masala tea is the best combination.

Ingredients:

For Dough:

All purpose floor / Maida - 11/2 cup
Water - 1/4 cup ( add more if needed )
Active dry yeast - 3/4 Tsp
Salt - 1 Tsp
Sugar - 1 Tsp
Milk - 1/4 Cup

For stuffing:

Boiled Potato - 1 Medium size
Onion - 1/2 Cup
Green chilly - 1 Num
Turmeric - 1/4 Tsp
Garam masala - 1/2 tsp
Cumin Seeds - 1/2 Tsp
Asafoetida - 1 Pinch
Curry leaves - 3 to 4 Num
Lemon juice - 1 Tsp
Oil - 2 Tsp

Method:

To make the dough:
1. In a bowl take 1/4 cup of  luke warm milk add sugar and mix it. Add 3/4 Tsp of active dry yeast and mix it. Keep it aside for few minutes. It will froth and raise ( forgot to take the picture)
2. In a mixing bowl add 11/2 cup of maida, yeast mixture, salt and water.

3. Mix and make a smooth dough.

4. Cover the dough with a cling wrap for an hour.

5. After an hour the dough has doubled in volume.


To make stuffing:
1. In a pan heat oil and add cumin seeds. Let it splutter. Add asafoetida.

2. Add finely chopped curry leaves and  green chilly.

3. Add onions and saute it. 

4. when onion turns light brown add turmeric and fry it.

5. Now add the boiled mashed potato, salt lemon juice, garam masala and finely chopped coriander leaves.

6. Mix it well. Keep it aside and allow it to cool.

[ For stuffing you can add any vegetable according to your choice ]

To make buns:
1. Pre heat the oven at 380 degree Fahrenheit.
2. Knead the for 3 to 4 minutes. Divide the dough into 4 equal parts.

3. Divide the stuffing into 4 equal parts.

4. The stuffing should be around half the size of the dough as we roll the buns.

5. Take a dough and make a dent in the middle. Keep the stuffing inside and cover the stuffing by pinching all the end towards center.

6. Repeat it for all the 4. Arrange in a baking tray on aluminium foil. Brush them with milk.
7. Bake it for 15 to 20 min until the top crust turns golden brown.
8. Serve Aloo buns / Potato buns with hot cup of masala tea as an evening snack.

NOTE: 
* For stuffing you can add any vegetable which is suitable. According to your taste.
* Yeast is very important while baking. If the yeast will not froth and raise when you add in luke warm milk than yeast is not active.
